Old Fashioned Ginger Loaf

      • 100g butter
      • 2 Tbsp golden syrup
      • 2 eggs
      • 1 C brown sugar
      • 2 tsp baking soda
      • 2 C flour
      • 2 tsp baking powder
      • 4 tsp ginger
      • 2 tsp mixed spice
      • 1½ C milk

Pre-heat oven to 160 degrees celcius. Line the wooden loaf box in 2 directions.

    In a large microwave-proof bowl or saucepan, melt the butter and golden syrup together. Add the eggs and sugar, mix well then add the dry ingredients except fo the baking soda. Mix the baking soda with the milk and stir into the egg mixture. Pour into the loaf box and bake for 1½ hours or until cooked.

    Cool slightly in the box then turn out onto a cake rack.
