Lemon Syrup Loaf

      • 2 eggs
      • 100g melted butter
      • Rind of 2 lemons
      • ¾ C castor sugar
      • 1¾ C flour
      • ¼ tsp salt
      • 1½ tsp baking powder
      • ¼ C milk
      • ¼ C lemon juice

      Syrup

      • ¼ C lemon juice
      • ¼ C castor sugar

    Line the wooden loaf box in 2 directions.

    Beat butter, eggs, lemon rind and sugar. Sift in dry ingredients alternately with the milk and lemon juice. Mix lightly to combine. Pour into the prepared loafbox and bake at 160oCnfor 1 ½ hours or until cooked.

    Mix together the syrup ingredients in a small pan and stir over a low heat until the sugar is dissolved. Remove the cooked loaf from the wooden loafbox and place it on a rack with a plate below. Pour the syrup over the warm loaf.

    Note: Oranges can be used instead of lemons for a tangy orange loaf.
