Loafbox Recipes

 

Old Fashioned Ginger Loaf

      • 100g butter
      • 2 Tbsp golden syrup
      • 2 eggs
      • 1 Cup brown sugar
      • 2 tsp baking soda
      • 2 Cup flour
      • 2 tsp baking powder
      • 4 tsp ginger
      • 2 tsp mixed spice
      • 1½ Cup milk

Pre-heat oven to 160 degrees celcius. Line the wooden loaf box with baking paper in 2 directions.

    In a large microwave-proof bowl or saucepan, melt the butter and golden syrup together. Add the eggs and sugar, mix well then add the flour and spices. Mix the baking soda with the milk and stir into the bowl. This will be a relatively wet mixture. Pour into the loaf box and bake for 1½ hours or until cooked.

    Cool slightly in the loaf box then turn out onto a cake rack. PRINT


     

Spicy Date and Orange Loaf

      • 1 ½ Cup chopped dates
      • ¾ Cup water
      • Zest and juice of 1 orange
      • ½ Cup milk
      • 150g butter cubed and softened
      • 1 ½ Cup brown sugar
      • 2 eggs
      • 2 tsp pure vanilla
      • 2 Cup plain flour
      • 2 tsp baking powder
      • ½ tsp baking soda
      • 1 tsp ground cinnamon
      • 1 tsp mixed spice
      • 1 tsp ground ginger

Preheat oven to 160 degrees celcius. Line the loaf box with baking paper in 2 directions.

Put the dates in a small saucepan with the water, orange zest and juice and simmer for 5 minutes. Add the butter to melt it. Stir in the milk and baking soda and leave to cool.

Beat the eggs and vanilla until pale and add to the cooled date mixture. Sift in the dry ingredients and mix until evenly combined. Scrape the mixture into the loafbox and cook for 1 hour 40 minutes or until cooked.

Cool slightly in the loaf box then turn out onto a cake rack. PRINT


 

Lemon Syrup Loaf

      • 2 eggs
      • 100g melted butter
      • Rind of 2 lemons, finely grated
      • ¾ Cup castor sugar
      • 1¾ Cup flour
      • ¼ tsp salt
      • 1½ tsp baking powder
      • ¼ Cup milk
      • ¼ Cup lemon juice

      Syrup

      • ¼ Cup lemon juice
      • ¼ Cup castor sugar

Preheat oven to 160 degrees celcius. Line the wooden loaf box with baking paper in 2 directions.

Beat butter, eggs,lemon rind zest and sugar. Sift in dry ingredients alternately with the milk and lemon juice. Mix lightly to combine. Pour into the prepared loafbox and bake at 160 degrees celcius for 1½ hours or until cooked.

Mix together the syrup ingredients in a small pan and stir over a low heat until the sugar is dissolved.

Remove the cooked loaf from the wooden loafbox and place it on a rack with a plate below. Pour the syrup over the warm loaf.

Note: Oranges can be used instead of lemons for a tangy orange loaf. PRINT
