Spicy Date and Orange Loaf

      • 1 ½ C chopped dates
      • ¾ C water
      • Zest and juice of 1 orange
      • ½ C milk
      • 150g butter cubed and softened
      • 1 ½ C brown sugar
      • 2 eggs
      • 2 tsp pure vanilla
      • 2 C plain flour
      • 2 tsp baking powder
      • ½ tsp baking soda
        • 1 tsp ground cinnamon
      • 1 tsp mixed spice
      • 1 tsp ground ginger

    Preheat oven to 160 degrees celcius. Line the loaf box in 2 directions.

    Put the dates in a small saucepan with the water, orange zest and juice and simmer for 5 minutes. Add the butter to melt it. Stir in the milk and baking soda and leave to cool.

    Beat the eggs and vanilla until pale and add to the cooled date mixture. Sift in the dry ingredients and mix until evenly combined. Scrape the mixture into the loafbox and cook for 1 hour 40 minutes or until cooked.

    Cool slightly in the loafbox then lift onto a cake rack.
